Does your family have a traditional Christmas morning breakfast menu? We don’t, but this past year I pulled together some pretty amazing muffins as some pretty special Christmas morning breakfast treats. I drizzled them with chocolate and then arranged them in a Christmas tree shape on a platter and they were quite a hit!
These muffins are made using my gluten-free Oatmeal Chocolate Chip Cake recipe. Prepare as directed in recipe, except scoop the batter into a muffin tin (I love my Pampered Chef muffin stone for this) and bake at 400 degrees for 22-24 minutes.
To make the chocolate drizzle, put 2-3 Tbsp. chocolate chips in the corner of a food storage bag and place it in a Pyrex pitcher of very hot water. After the chips melt,snip a small tip of the bag and squeeze a small stream of chocolate onto the tops of the muffins.
For fun, I arranged the muffins in a Christmas tree shape on a platter.
