This has got to be just about one of the easiest zucchini recipes around! Simply halve the zucchinis, top with oil and seasonings, then broil until lightly browned. Serve as is on a platter or cut in half or in smaller slices and serve in a bowl. Zucchini prepared this way is so tasty and moist. And cooks up in record time! So easy, but so delicious!
Where did I learn to prepare zucchini this way? I grew up in New England and my folks lived in a quaint little neighborhood when I was a preschooler. My family has happened to move very near to this same neighborhood and at one of the neighborhood reunions (we’re talking families that lived near to each other forty years ago!) one of the moms prepared this simple zucchini dish and I was won over.
Broiled Zucchini
As many zucchini as you’d like
Olive oil (or organic butter)
Your choice of seasonings: Italian seasoning, oregano, basil, dill, paprika, garlic powder, etc.
Sea salt
Wash zucchinis, cut off tips and then cut in half from end to end. Lay, skin down, on baking sheet. Brush with oil (or dot with butter). Sprinkle with seasonings and sea salt. Put under broiler for 10-20 minutes, depending upon the size of the zucchini, just until the tops start to brown and the zucchini proves to be softened when poked with a fork. Watch these carefully toward the end of their cooking time.
