“Can’t Live Without” Dessert

As I’m putting the finishing touches on the table of contents for my Good and Easy Eats ebook, I’m stumped for one entry.  I have 7 great staple breakfast recipes, 7 easy lunch options, 7 super dinner choices, 7 handy snack recipes and 6 (yes- 6) dessert listings.  Now the aim of this book is to offer simple, affordable, tasty and wholesome staples for every part of the day.  Dessert is more a special occasion treat for us, but I knew it would be great to have a reliable bunch of dessert recipes too.  These are the six I’m good on:

  • Banana Oat Cookies (basic cookie)
  • Apple Crisp (comfort food and great for a gathering)
  • Chocolate Cake (got to have a chocolate cake recipe!)
  • Oatmeal Chocolate Chip Cake (a very fun, very moist cake- almost always the birthday cake-of-choice at our house)
  • Freezer Pie (basically a smoothie in a date nut crust- easy and delicious!)
  • Rice Pudding (is this just a Northern thing?)- maybe Banana Pudding instead?

I was thinking perhaps another cookie recipe (maybe gingersnaps or my chocolate mint cookies) but I’m really not sure.  My mom recommended pumpkin pie, but that seems a seasonal (and maybe regional) food.   And that’s when I had the thought to throw the question out to you all.  What do you consider a dessert staple?  What dessert would you like a wholesome version of so you could have peace of mind enjoying it more frequently?  I may already have a recipe for it, or I might just undertake the challenge to develop a new recipe for it- here’s your big chance.  So, what’s your “can’t live without” dessert?

  1. How about a healthy ice cream? You can make dairy-free versions. My favorite is frozen strawberries and chopped walnuts.

    Another one is mango, fresh, food processed until gelled, and then add some chia seeds.

    The only dessert that comes close to a staple around here is your Apple Crisp! Cookies, cakes are only served as dessert if they are leftover from snack or breakfast (yeah, we have weird breakfast, but how bad can whole wheat chocolate cake be anyway?) I don’t have any great ideas, but can’t wait to get your new book!

    For starters, yes, Rice pudding IS a Northern thing! (speaking as a native Texan who currently resides in Pennsylvania) =) And pumpkin pie is definitely NOT a regional thing! (but rather loved by all everywhere, although I can’t completely speak for those on the West coast) =) Healthy banana pudding sounds wonderful. My personal “can’t live without” is a good brownie (which I know you already have). I’ve been wanting a healthy, easy, cherry pie recipe if you feel like a challenge! LOL. And it doesn’t get more “All American” than cherry pie I don’t think! =) Hope all that helps!

    What about the “fudge” recipe. This might be helpful for families adjusting from SAD withdrawal.

    How about an “ice cream”? An “ice cream” would go really well with the cookies, apple crisp, chocolate cake. Maybe it could even be extended to an “ice cream” cake. A combination of a layer of cake and a layer of “ice cream.” YUM!

    Gluten Free, Sugar Free, of course … something lemon would be nice: lemon icebox or lemon meringue pie, lemon bars. A new version of pecan pie, strawberry shortcake or strawberry trifle, almond butter cookies (rather than peanut butter), pound cake or butterscotch brownies. Can you tell some of the things I miss? :)

    Well this is an easy one – how can anyone resist chewy, gooey, fudgey brownies!?! Especially your ‘no-bake’ version, that are not only delicious but, as the saying goes, nutritious to boot! Quick story: I made a batch up (in literally 3 minutes, including opening the cans of black beans, blending everything up, and pouring the batter into a pan to chill) to bring to a work function. Every one loved them there, but since I made a double batch, we had a whole lot of brownies, so then I brought the rest to the gym and gave them to some of my friends and the staff there – including one of the men who’s idea of healthy is the lettuce and pickle that are on his BigMac! Needless to say, he was the biggest skeptic, and later my biggest fan, when I finally convinced him that main ingredient was black beans! I feel like that gives these brownies to ton of bragging rights!

    Also DEFINITELY include the rice pudding – seriously my favorite dessert! I often times end up with a lot of leftover brown rice when I cook up a batch, and we all know how rice does not last very long in the fridge until it become dry and sort of crunchy, so since your recipes are (usually – I’ve actually never know one that is not) simple and time efficient, not to mention gluten and dairy free, I would LOVE to have it!

    One more thing I know you’re doing a drawing for one of your cookbooks, and since I am already a subscriber to your ‘Tid Bits’ can I be included in the raffle (or am I automatically)? I really want to try my luck at winning your GF edition!

    Chocolate chip cookies are definitely my “can’t-live-without” dessert. I love your recipes and have tried lots of them for my family. If there is any way to make a dairy-free whipped cream I would be delighted to find out. We use almond milk but for certain desserts (like pumpkin pie) I whip dairy heavy cream sweetened with honey and a little vanilla since I know of no alternatives to this favorite topping. Thanks!!!

    Definately something creamy! I am a fan of both rice pudding and banana pudding. Since you already have banana oatmeal cookies I would choose rice pudding over the two. However, what about a coconut cream pie/pudding or coconut something?

    Hi Kim,
    Ok we just moved to Ontario Canada but are originally from the East Coast, Nova Scotia to be exact and this time of the year and any time Gingerbread cake, gingersnaps, ginger muffins and anything made with molasses is a big treat. These are comfort foods found in the East Coast. It has been a challenge to make these treats GF.
    Do yo have any recipes??
