The official name for this recipe is so plain it’s pitiful: “Chickpeas and Tomatoes”. Our family name for it is “Broken Hand Goulash”. A few years ago I tore ligaments in my right hand and, out of necessity, my meal preparation had to become greatly simplified. My son would open a few cans of chickpeas and a can of tomatoes and I would saute some onions and peppers. Combine in a pot and voila- Broken Hand Goulash. Served with brown rice and some steamed green beans- it’s a delicious and satisfying meal.
But here we are again with a recipe with a less-than-appealing name. Who wants to try a recipe called “Chickpeas and Tomatoes”. So- I’m soliciting your help again. If you make this recipe (and I really hope you do- it is so SIMPLY DELICIOUS) and during dinnertime conversation a good title comes up for it, please pass it along- okay? Thanks! Chickpeas and Tomatoes
2 Tbsp. oil/butter
1 onion, chopped
1 bell pepper, chopped
6 cloves garlic, crushed
1 tsp. dried basil
1/2 tsp. dried oregano
3 cans chickpeas, drained
14 oz. can diced tomatoes
1/2 tsp. sea salt
Saute onion and pepper in oil until tender. Add crushed garlic and saute briefly. Stir in rest of ingredients and simmer for at least 20 minutes before serving.
Serve with brown rice
Optional: add 1/2-1 finely diced jalapeno with onions and peppers.
Hi Kim, we love this recipe! My daughter and I were just cooking it together when my son came in and said “what are we having?” She said “Chickpea Delight!” Thought that was a good name if you haven’t found one yet! My son is reading the lion, the witch, and the wardrobe and we were talking about turkish delight- I think that is where she came up with the name!
