Simple Zucchini Ratatouille

Wondering how to deal with that bounty of summer veggies?  Particularly the zucchini that are taking over your garden and refrigerator?   I love making this simple zucchini ratatouille and the whole family loves it.  We usually serve it with brown rice, but it would be equally great served with whole grain pasta.  I have included amounts for dried herbs, but you can substitute fresh with even higher quality results.  You can use 1 tablespoon or so of fresh herbs to replace each teaspoon of dried herbs.  Basil is so good and in such abundance, you can use just as much as you want!

    We just tried the Ratatouille recipe and placed it on a home made pizza crust made with Kamut and whole wheat. It tasted fabulous! Thank you again for an easy meal. My family appreciates it as I am learning to cook again.
