Wondering how to deal with that bounty of summer veggies? Particularly the zucchini that are taking over your garden and refrigerator? I love making this simple zucchini ratatouille and the whole family loves it. We usually serve it with brown rice, but it would be equally great served with whole grain pasta. I have included amounts for dried herbs, but you can substitute fresh with even higher quality results. You can use 1 tablespoon or so of fresh herbs to replace each teaspoon of dried herbs. Basil is so good and in such abundance, you can use just as much as you want!
Simple Zucchini Ratatouille
2 Tbsp. olive oil or coconut oil
2 onions (sliced longways)
4 cloves garlic, crushed
3-4 medium zucchini, halved and sliced
2-3 chopped tomatoes (or 1 1/2 cup canned tomatoes)
1 tsp. dried basil
1/2 tsp. dried oregano
1 Tbsp. dried parsley
pinch cayenne
1/2 tsp. sea salt
Saute onions and garlic in oil. Add sliced zucchinis and saute until tender. Add the rest of the ingredients and simmer for at least 5-10 minutes.
Optional- Garnish with sliced black olives or roast red peppers.
